Spinach artichoke dip pasta is the perfect meal for a busy weeknight during the school year. It’s an easy dinner that the whole family can enjoy and let’s be honest, a delicious pasta dish that’s quick to take from the stove (or oven) to the table is always a winner. Add in some chicken for an even better creamy pasta bake!
Baked Spinach Artichoke Dip Pasta with Chicken
This recipe is coming to you from a blog from the past! For anyone new here, once upon a time I had another blog. Two other blogs actually. And both blogs date way back. As in I’m an OG in the mom blog world. In 2008, I started my San Antonio Smiths blog to keep up with friends and family. It was just a little Blogspot account and not self hosted. These were the days when you had to be in college to have a Facebook account and way before Instagram. All of my friends from the college days had Blogspots to keep in contact with each other. Everyone had a blog roll that would alert us when someone made a new post and we would check in every few days to leave comments on the blogs. For the most part, our blogs consisted of short posts that contained pictures with captions of our daily life. It was very much Instagram before Instagram. And now you know where the idea for Instagram came from. It was take from mom bloggers. Ha!
From there I noticed that other stay at home moms were starting blogs to actually earn an income. My mother-in-law made a comment that she likes reading my blog and that I was a good writer so I was like, “Hey, I can do this as a way to work from home, too!” And that’s how Dandy Giveaway was born. It started out as a giveaway blog where companies would send me a product for my son, like Little Tikes sending a toy or ride-on car, and then send an additional of to a winner of a giveaway that I hosted on the blog. I had sidebar space available for businesses to pay for an ad, before ad networks even existed! I didn’t make a ton of money at first but it was fun and the blog evolved over time into more than just giveaways.
A few years went by and I found myself busier and busier with my growing family. I needed some help if I was going to keep the blog growing. Contributors started writing on my blog as a way that they could earn free products from companies or get paid for doing sponsored posts. One of these contributors, Camille, would post some really great craft ideas and recipes. She’s also super talented in both theatre and artwork. These days she performs on stage in New York and runs a shop on Etsy creating custom illustrated prints. You can find Camille’s Paint Shoppe HERE. Pasta. It’s what’s for dinner.
This time of year is really busy around here. Back to school and all the places we need to be for the various activities my kids are involved in. That means I’m always on the hunt for the perfect dinner recipes that will have us sitting around the table together Pasta is a great way to make that happen.
Different types of pasta are by far my favorite recipes to make for dinner. And if it’s a creamy sauce, then I’ll most definitely be making it for the family! Spinach artichoke is also a favorite dip at our house. With simple ingredients, Camille’s recipe tastes just like the classic dip combined with pasta. This delicious pasta has a great flavor and the best part is, it’s just so easy to make!
Easy to Make Spinach Artichoke Dip Pasta
Ingredients:
1 small onion
1 can (6.5 oz) quartered and marinated artichoke hearts
2 large chicken breast
2 cups shredded mozzarella cheese
1/2 cup parmesan cheese
2 T. minced garlic
1 box frozen spinach (or fresh spinach if you prefer), thawed and squeeze out excess moisture
1/2 cup mayonnaise
16 oz. sour cream
1 box medium shells (or penne pasta if you prefer)
1/2 cup panko breadcrumbs (optional)
Directions:
Cut up chicken, artichokes, and onion and set aside.
Boil the pasta shells in a large pot of water per the directions on the box. Then divide the drained pasta into two round baking dishes.
While the pasta is cooking, sauté the chicken, garlic, and onions in a large skillet.
In a large bowl, combine cream cheese, artichoke hearts, mayo, and sour cream.
Combine everything (minus the pasta) with 2 cups shredded mozzarella into large mixing bowl and stir together with a large spoon.
Pour the cream cheese mixture over both dishes and spread to cover the pasta.
Cook at 375 for 15 minutes, then sprinkle on 2 cups of parmesan cheese. (Top with panko breadcrumbs if you prefer.) Return to oven to bake until the cheese is bubbling.
Spinach artichoke dip pasta is so delicious and easy to make!

Leftovers for Dinner
This recipe also tastes great the next day! Simply refrigerate the leftover pasta dish and then heat up again in either the oven or microwave.
