What can I say, weeknights can get pretty crazy around here. We are just so busy and it’s getting more and more difficult to sit down together for dinner. Meals together do happen most nights, we just eat late. But a quick to make meal is also really helpful, making it easier to eat together sooner.
Lemon ricotta pasta is the perfect staple for those busy weeknight dinners. It’s just such an easy pasta dish! Made with a creamy ricotta sauce, it has just the right amount of bright lemon flavors mixed in. The creamy sauce is light and full of flavor. Altogether making this zesty lemon ricotta pasta one that you will serve for dinner again and again!
Delicious Lemon Ricotta Pasta
Such an easy dinner idea! Also referred to as one pot lemon ricotta pasta, this creamy pasta recipe uses fresh ingredients and is so delicious.
Ingredients:
4 tbsp butter
1 cup heavy cream
2 lemons
1 cup ricotta cheese (or low-fat ricotta if you prefer)
1 tsp garlic powder
½ tsp black pepper
½ tsp salt
1 cup mozzarella
1 package of spaghetti
Directions:
Cook Spaghetti according to package instructions.
Zest 2 lemons and set aside.
In a saucepan with high sides, melt butter over medium heat.
Add cream.
Add lemon zest.
Squeeze in lemon juice from both lemons.
Add remaining ingredients and whisk until smooth and creamy.
Cook sauce until lemon ricotta mixture is melted..
Add cooked and drained spaghetti to sauce and stir until coated.
Serve immediately.
Optional: Dress up the pasta dish with fresh herbs, like fresh basil or top with sprigs of parsley.
