Most kids would be happy with a simple bowl of mac and cheese. Or at least that's my experience! Turn some sweet bell peppers into a bowl of macaroni and cheese and you have a win-win. Cheesy mac and cheese stuffed bell peppers are the perfect addition to the busy school night meal. Pair the stuffed peppers with some fruit and your favorite bread rolls for a truly balance meal.

Cheesy Mac and Cheese Stuffed Bell Peppers Recipe
There are so many popular ways to stuff peppers. From shredded cheese to savory, you can create a pepper recipe to fit any flavor. Add some marinara sauce in the pepper for an Italian flair or stuff with more vegetables like mushrooms, green onions, carrots, or spinach. (See below for more vegetable ideas to pair with peppers.) It only takes a little bit to fill the pepper. A fun meal and unique way to serve macaroni and cheese, this is a great recipe that your kids will ask for again and again.

What vegetables go good with bell peppers?
Zucchini and yellow squash: Any type of squash will add the right amount of buttery flavor to offset the sweet peppers.
Eggplant: This vegetable works well with pasta sauce to create a ratatouille dish combines with the peppers.
Broccoli: Not something that you would think would work with peppers, but this vegetable can actually be a broccoli and cheese dish stuffed into peppers.

Macaroni and Cheese Stuffed Peppers
Prep time: 15 minutes
Cook time: 30 minutes
Servings: 4-6
Ingredients:
4-6 large bell peppers
1 box of Velveeta Shells & Cheese or Kraft Macaroni & Cheese
1 cup shredded cheese
½ cup Panko breadcrumbs
1 tablespoon melted butter
* optional: toppings like sour cream, bacon bits, crumbled blue cheese, streamed broccoli that has been chopped up

Instructions:
Preheat oven to 375 degrees
Mix up mac and cheese per the instructions on the box (or homemade mac and cheese if you prefer).
Cut off the pepper tops and hollow out the inside.
Place each pepper upright in a baking dish and pour about ¼ cup of water into the bottom of the dish. This will create steam during the baking process and the peppers will come out perfectly tender.
Spoon mac and cheese, about 2-3 spoonfuls, into the hollowed peppers.
Top with shredded cheese.
In a small bowl, mix melted butter with breadcrumbs.
Sprinkle the breadcrumb mixture over the top of each pepper.
Place aluminum foil loosely over the baking dish.
Bake for 20 minutes.
Remove foil and bake for an additional 10-15 minutes or until the breadcrumb topping is a crispy, golden brown.

Protein Variation for Cheese Stuffed Bell Peppers:
Instead of making a mac and cheese stuffed bell peppers recipe, make something really savory with the cheese! Brown up 1 lb. of ground beef to place inside each pepper. You can also create this same recipe using sausage or bacon. Place the protein inside the pepper and then top with tons of shredded cheese.
