Copycat Crumbl Pumpkin Cookies
Perfectly delicious for fall with the perfect amount of pumpkin flavor!
Servings: 20
Prep: 15 minutes
Cook Time: 12 minutes
Total Time: 27 minutes
Pumpkin cookie ingredients:
- 1 cup flour
- 1 cup oatmeal
- 1 tsp baking powder
- ½ tsp salt
- ½ cup sugar
- ½ cup brown sugar
- 1 tsp cinnamon
- ½ cup butter
- ½ cup pumpkin puree (you can purchase in the can from your local grocery store or puree yourself using fresh pumpkin)
- 1 egg
Directions:
- First, preheat oven to 350 degrees F and line a cookie sheet with parchment paper. Then set aside.
- In a large mixing bowl you’ll want to whisk together the flour, oats, sugars, baking powder, salt, and cinnamon. Set aside.
- In the medium bowl of a stand mixer whip together the wet ingredients: butter, pumpkin, and egg.
- Next, add your dry ingredients to your pumpkin mixture and mix until well incorporated.
- Using a medium cookie scoop, scoop dough balls onto the prepared baking sheet.
- Bake for 10-12 minutes and then transfer cookies to a wire rack for cooling.
7. Once the cookies are fully cooled, simply drizzle maple glaze (or your favorite icing that goes well with pumpkin) over the cookies with a spoon or you can use a piping bag.
