I’m always on the hunt for fun and festive holiday desserts. Easter Bunny cottontail candy truffles are exactly that. Perfectly festive and fun for the springtime holiday! This recipe also makes me think of the old fashioned song by Gene Autry, Here Comes Peter Cottontail. How can it not? These are candy cottontails!

Easter Bunny Cottontail Candy Truffles Recipe

Ingredients for the Easter Bunny cottontail candy truffles:

15 carrot cake flavored Oreo cookies

15 lemon flavored Oreo cookies

8 oz cream cheese at room temperature (You’ll use 4 oz per Oreo cookie flavor.) 

3 oz white melting chocolate 

1 teaspoon coconut oil 

1 cup shredded coconut flakes

What you’ll do to make the Easter Bunny cotton tail candy truffles:

Step 1: Crush the Oreos (each flavor at a time) in a food processor or you can also do this in a ziplock bag. Either way will make a fine crumble. You can also add cream cheese to the food processor at the same time. (Or you can also just stir the cream cheese in a small sized bowl until well combined with the crushed Oreos from a ziplock.)

Step 2: Cool mixture in a small sized bowl in the freezer until firm enough to roll into bite size balls. (Tip: Lightly buttering your hands will help to avoid sticking when you form the balls.)

Step 3: Melt the white chocolate per instructions on the package (I like to do this in the microwave with a tablespoon of vegetable oil) and then dip the candy truffles in until completely covered. Tap off the excess chocolate so it’s smooth all the way around with no drips.

Step 4: Take off any excess chocolate and sprinkle immediately with shredded coconut.

Step 5: Place the truffles in the freezer so that the chocolate will set up.

Step 6: Once the chocolate has set up then you can serve and enjoy!
