Are enchiladas allowed for Taco Tuesday? They most definitely are when they are creamy salsa verde chicken enchiladas! My family really likes to have tacos on Tuesdays. Breakfast tacos, soft tacos, crunchy tacos… we eat them all. But sometimes it’s nice to mix it up on Tuesdays with some enchiladas instead of the usual tacos!

Easy To Make Creamy Salsa Verde Chicken Enchiladas – 6 Ingredients!

My family loves Taco Tuesday. I on the other hand love meals that are quick and easy to make. Especially when it’s a recipe that can be made up in advance and then popped in the oven to be on the table in less than 30 minutes. That’s a major win in my recipe book.

When it comes to tacos the prep can be really time consuming. There’s just so many toppings to get ready. Shredding cheese, cooking hamburger meat and cutting up lettuce and tomatoes. A lot to do! But like I said, my family loves Taco Tuesday. Fortunately I have the kids fooled that creamy salsa verde chicken enchiladas are perfect for Taco Tuesday. Even though they aren’t technically tacos!

Salsa Verde For Taco Tuesday

Salsa verde (green salsa) is perfect for Taco Tuesday but can sometimes be a little too hot and spicy. That’s why I think this particular recipe is so great. The creamy American cheese really tones down the spice. Leaving a delicious flavor that the entire family will love.

Quick & Easy Dinner

I love how quick and easy this recipe is to make. It’s creamy, delicious, filling and one that I’ll be making over and over again. Enjoying dinner together as a family can be done in our busy schedules. Especially with the help of this creamy salsa verde chicken enchiladas recipe!

Creamy Salsa Verde Chicken Enchiladas Recipe

Ingredients:

  • 8 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 jar of salsa verde (store bought and already made!)
  • 3 1/2 cups of shredded American cheese
  • 1 package grilled chicken strips (already precooked in the package!)
  • 1 package 10 inch flour tortillas

ONLY 6 INGREDIENTS!!!

Directions for creamy salsa verde chicken enchiladas:

Preheat oven to 350 degrees.

Mix together salsa verde, cream cheese and sour cream.

Add American cheese.

Place a few grilled chicken strips onto a flour tortilla.

Top grilled chicken strips with a few spoonfuls of creamy mixture.

Roll up the flour tortilla.

Spray a 9×13 baking dish with cooking spray and then fill with rolled flour tortillas.

Top all of the rolled flour tortillas with remaining creamy mixture.

Drizzle remaining salsa verde on top.

Top with shredded American cheese.

Bake for 25-30 minutes at 350 degrees.
