Here in St. Louis it’s the perfect time of year to start entertaining outdoors and indulging in gluten free Pina Colada dip!  The evening weather isn’t too hot and it’s not too cold.  Just the perfect temperature for enjoying patio life with friends and family.  Especially before the summer heat is upon us!  St. Louis is notorious for being hot and humid during the summer months so we take what we can get on the patio before July.  I’m always on the hunt for perfect refreshments to serve on the patio and this gluten free Pina Colada dip recipe fits the dandiness factor.  It’s a refreshing and healthier dessert option for patio dining!

Gluten Free Pina Colada Dip

This recipe will yield 3 cups of gluten free Pina Colada dip.

INGREDIENTS
8 oz brick of cream cheese, softened
1/2 of 13.5 oz can coconut milk
1/2 cup Dole Pina Colada juice (or pineapple juice)
1 teaspoon coconut extract
8 oz Cool Whip, softened

DIRECTIONS
1.   In a , add the cream cheese. With an ( is bright cranberry color! *squeal*) beat the softened cream cheese on medium speed until smooth (about 1-2 minutes).
2.   Add the coconut milk, juice and extract. Mix on low speed for 1 minute.
3.   Fold in the Cool Whip.

4.   Chill for 2-3 hours.
5.   Transfer to a and serve with your favorite fresh fruit, gluten free graham crackers/wafers, etc.
