It’s hard to believe that it hasn’t even been a year yet since we went to Holiday World in Santa Claus, Indiana. Let’s be honest. The remainder of 2019 was long. Now here we are with 2020 feeling like the longest year ever and we are only less than 4 months in! My family loved everything about that magical place and I loved all the delicious gluten free food offerings. Especially the gluten free funnel cakes. Since then I’ve created a copycat funnel cake recipe of the theme park’s delicious treat. I hope you enjoy it as much as I do!

Theme Park Copycat Funnel Cake Recipe That’s Gluten Free
What you’ll need:

- 3 eggs
- 2 cups milk
- 1⁄4 cup sugar
- 3 1/2 cups Bob’s Red Mill all-purpose flour (or regular flour if you prefer)
- 1⁄2 tsp salt
- 2 tsp baking powder
- 1⁄2 tsp vanilla
- powdered sugar, chocolate syrup, and strawberry syrup
- funnel or squeeze botte to dispense batter
- metal tongs
What you’ll do:
This recipe will yield about 6 funnel cakes.
1.) Heat 4 cups of oil in a funnel cake fryer or pot on the stove.
2.) In a large bowl beat milk, sugar, eggs and vanilla together. Mix well and then set aside.
3.) In a separate medium size bowl mix the flour, salt and baking powder.
4.) Combine the mixtures together into the large size bowl and mix well.
5.) Now you’ll use a funnel (or squeeze bottle) to dispense the batter into the hot oil.
6.) Pour batter into the funnel and then dispense into the hot oil starting in the center of the fryer. Make circular motions all the way towards the outer edge of the fryer with the funnel.
7.) Fry for approximately 2 minutes and then flip over with tongs to fry the other side for 2 minutes. Both sides will be a nicely browned.
8.) Put a couple squares of paper towel on a plate and then carefully remove the funnel cake with tongs. Place on top of the paper towels. This will allow the excess oil to drain.
9.) Sprinkle with powdered sugar or drizzle with chocolate and strawberry syrup.
