I’m not much of a morning person. As in I really like sleep. Especially on the weekends after I’ve being going, going, going all week. It can be very trying driving kids all over the place and I’m typically exhausted by Friday. Let’s be real. I’m exhausted on Tuesday!
On the weekends my husband is really great about making his famous breakfasts for the kids. He enjoys doing it and trying out new delicious recipes. This Pillsbury biscuit egg casserole recipe is a quick and easy dish that he came up with one weekend. He had the thought to create an easy breakfast dish that would also make life easier during the school week by freezing in a ziplock bag. This way our son could just grab a couple out of the individual servings from the freezer and throw in the microwave before rushing out the door.

For me I’m all about the easy casseroles. Dump everything in, bake it and done. With this recipe you can create a quick and easy breakfast using biscuits, sausage links, eggs and cheese. Pillsbury biscuits are always a great breakfast idea and not just in the traditional way you think of a biscuit. This Pillsbury biscuit egg casserole recipe will save you so much time on a busy morning and I like to also think of it as a breakfast bread.

There are so many great kinds of breakfast breads besides a biscuit casserole. Monkey bread, cinnamon rolls, buttermilk pancakes, French toast are just a few of the other bread like options for breakfast.
Pillsbury Biscuit Egg Casserole Recipe
Here is a recipe for a Pillsbury biscuit egg casserole in a muffin tin and will quickly become one of those favorite recipes the whole family enjoys!
Ingredients:
1 can (16.3 oz) refrigerated Pillsbury™ Grands! ™ Flaky Layers Original Biscuits (8 Count)
10 eggs
12 brown and serve sausage links (or other type of breakfast meat of your choosing)
1 cup shredded cheddar cheese
Cooking time: 15 minutes
Directions:
- Preheat oven to 350 degrees.
- Use a large bowl to scramble eggs.
- Grease a muffin tin with cooking spray.
- Cut biscuits into thirds.
- Place biscuit pieces into muffin tin (one in each)
- In a large skillet brown sausage links and slice up.
- Put cooked sausage on top of the biscuits.
- Pour egg mixture over the biscuits and sausage pieces.
- Top with shredded cheese.
Bake at 350 degrees for 15 minutes, or until the eggs are set and the biscuits are golden brown.
Serve with your favorite breakfast sides, such as fresh fruit, hash browns, toast, or pancakes or just grab one of these fluffy biscuits for a quick breakfast on the go!
Tips:
- It’s easy to create an even more flavorful casserole by simply adding your favorite breakfast meats, vegetables, or cheeses.
- You can use any type of cheese you like in this recipe.
- Additional ingredients that are perfect for this biscuit egg casserole are items like bacon, mushrooms, bell peppers, green onions, red peppers, green peppers or even fresh spinach.
- If you don’t have a muffin tin, you can make this recipe in a 9×13 inch casserole dish. Just be sure to increase the baking time to a total of 30-35 minutes.
- Make this recipe ahead of time or last minute (by quickly assembling in the morning). The casserole can be baked in advance and then refrigerated overnight to then pop in oven for reheating in the morning.
- Can be kept 3-4 days refrigerated in an airtight container or up to 6 months frozen in a freezer bag.
