Blueberry Pancake Bundt Cake For Mother’s Day Brunch
I’m a big fan of brunch. Who isn’t? There are just so many breakfast foods that are perfectly delicious to serve for lunch. And if I’m being honest… breakfast is amazing for dinner, too. This blueberry pancake bundt cake is by far the easiest recipe for Mother’s Day brunch. Or any brunch meal really. Or just dessert. Basically a recipe that you will make again and again!

Blueberry Pancake Bundt Cake Recipe
Ingredients:
- 2 cups complete pancake mix
- Water or milk per package instructions
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries, washed & dried
- Powdered sugar
- Syrup
Preparation Instructions:
Step 1: Preheat oven to 350 degrees.
Step 2: Spray bundt pan with nonstick spray.
Step 3: Layer berries in bottom of pan.
Step 4: Stir together pancake mix, water or milk, baking powder, and vanilla until well combined.
Step 5: Pour over the berries.
Step 6: Bake for 20-25 minutes or until golden brown.
Step 7: Let cool about 5 minutes.
Step 8: Turn out onto a platter.
Step 9: Dust with powdered sugar.
Step 10: Serve with butter & syrup and enjoy!
