You can never go wrong with a good carrot cake recipe, especially when making it even healthier with shredded zucchini. That is always a win! Delicious and easy to make in the form of dessert bars, both flavors work well together. A taste that is pleasing to so many and the adorable carrot design made out of icing adds a fun look for the season.

Carrot Cake Zucchini Bars Recipe
This recipe is delicious and perfect for spring. Also a healthier dessert option!
Ingredients for carrot cake zucchini bars:
1 box carrot cake mix + additional ingredients per instructions
1 cup zucchini, shredded and squeezed
Cream cheese frosting in piping bag with cut tip
Orange cookie frosting
Green cookie frosting
What you’ll do to make carrot cake zucchini bars:
Step 1: Prepare cake batter per box instructions (using the additional ingredients required on the box) then fold in the shredded zucchini. You’ll want to mix everything together by stirring really well.
Step 2: Pour mix into 13×9 sheet cake pan that is lined with parchment paper.
Step 3: Bake at 350 degrees for about 15 minutes or until toothpick comes out clean. Cool completely.
Step 4: Slice into 8-10 bars.
Step 5: Pipe a border of frosting around each bar. Then pipe frosting in the middle and smooth out with a knife.
Step 6: Use the cookie frosting in orange to drizzle on a carrot shape by making a zigzag back and forth.
Step 7: Use the green cookie frosting to create the leaves of the carrot.
Step 8: Place in the refrigerator for the icing to set up or you can serve right away.
