Easter Cake Pops Recipe

Ingredients for making the Easter cake pops:

  • 1 box of cake mix (any flavor)
  • 1 cup of icing (any flavor)
  • 3 bags of melting chocolate
  • 1 package of the skinny lollipop sticks or cake pop sticks
  • Easter or spring time sprinkles

What you’ll do to make the Easter cake pops:

Step 1: Prepare cake according to box instructions and then allow to cool completely.

Step 2: Crumble up the cake into a large mixing bowl and then slowly add the icing 1/2 cup at a time. Mix up until consistency is dense (lightly crumbly) and can be molded into dough balls. You can add in additional icing if needed, but be careful not to add too much. Too much icing will make the cake balls too moist and soft.

Step 3: Refrigerate the mixture for 30 minutes until chilled.

Step 4: Next you’ll measure out the cake mixture to form 1 inch size cake balls. Place each on a cookie sheet covered in parchment paper. You’ll repeat this process until all of the cake ball mixture is used. Then place in the refrigerator for an hour.

Step 5: Melt the chocolate in the microwave with 1 tablespoon of vegetable oil. (Stirring every 30 seconds.)

Step 6: Take a lollipop stick and dip the end into the melted chocolate. Immediately insert into the center of the cake pop ball with about halfway depth. Repeat this with each cake pop ball and then allow the chocolate to harden at room temperature. You can also place the cookie sheet back in the refrigerator for a few minutes once all the cake pops have lollipop sticks placed in them.

Step 7: Dip each cake pop into the melted chocolate until they are completely covered. You’ll want to gently tap the lollipop stick against the side of the bowl so that the excess melted chocolate will drip off.

Step 8: Immediately sprinkle on the Easter sprinkles before the chocolate coating has completely set.

Step 9: Place back on the parchment covered cookie sheet (or you can stick each into a foam block) and then allow to harden fully. 

Store the mini cake desserts in the refrigerator until you are ready to serve. The Easter cake pops can be stored in the refrigerator for up to one week.
