I love desserts that are quick and easy to make, but I also love them to be gluten free. I’ve been living gluten free for over two years now. It has been an adjustment, sure. But at the same time I’ve enjoyed researching different ways in which to eat gluten free. Pinterest is full of gluten free recipes. Some of my favorite bloggers are gluten free, too. Basically the internet is full of a plethora of gluten free options. The following gluten free bar recipes all look so very delicious. Plus, they are easy to make. And that’s a definite win-win in my book!

I was diagnosed with celiac disease over 2 years ago. It will actually be 3 years in January! Crazy how time flies. Sometimes it seems like it was yesterday. Then I realize just how far I’ve come on my gluten free journey. I’ve seriously gotten so used to eating gluten free. It’s just part of who I am now. I’ll admit that at first it was a really hard adjustment. These days I don’t even think about it all that often. This is probably due to the fact that there are so many delicious gluten free options out there.
