Spring is right around the corner! At least it feels like it is anyway. This morning I put on my spring shoes and skipped around with a true spring in my step. Then I read the news that something called a bomb cyclone is going to rain on my spring type weather. Is this a joke?! Regardless of that whole weather craziness, this gluten free Funfetti Whoopie Pies recipe will still have me in the spring mood. Everything about them screams spring!
Funfetti Whoopie Pies
Can you really go wrong with a cookie that is Funfetti and Whoopie Pie together in one delicious dessert? I don’t think so!
Gluten Free Funfetti Whoopie Pies Recipe
Ingredients:
Directions:
- Preheat oven to 375F degrees.
- In a large bowl, beat the cake mix, eggs and oil. The mix will stay quite dry due to it being gluten free.
- Roll the dough into small balls and then flatten onto an ungreased baking sheet. (I like to use a silicone baking mat.)
- Bake for 6-8 minutes.
*Keep in mind that gluten free mix will be really dry and will seem like it’s falling apart. Just pack it together in a ball and flatten as best you can. They will end up looking just fine when they are baked! A regular cake mix will definitely hold together easier when flattening to form the cookie. But either type of mix will work.
Simply let cool and then make cookie sandwiches with color icing. Get creative, if you choose, with some spring colors. I think the pastel color icing really help the Funfetti sprinkles throughout the cookie really pop.
Seriously that easy to make and so delicious. The entire family will love eating these cookies right up!
