St. Louis is known for many things. The Arch, Cardinals, Blues and Mississippi River just to name a few. But St. Louis is also famous for food. Some really, really good food and desserts. So many delicious favorites. Imo’s Pizza, Ted Drewes frozen yogurt, Italian food on the Hill, toasted ravioli and gooey butter cake. One of my favorites is the gooey butter cake. Being gluten free means that I had to figure out how to make a tasty gluten free gooey butter cake recipe… and so I did!
History Of Gluten Free Gooey Butter Cake
The deliciousness that is gooey butter cake was created totally by accident. In the 1930’s a baker in St. Louis accidentally reversed the amounts of flour and butter… A mistake that ended up being amazing!
Gluten Free Gooey Butter Cake Recipe
Ingredients:
- 1 box gluten free yellow cake mix
- 1 stick butter (melted)
- 4 eggs
- 1 package cream cheese (8 oz.)
- 1 1/2 T. vanilla
- 1 bag powdered sugar
Directions:
- Preheat oven to 350 degrees.
- Grease a 9×13 inch pan.
- Mix cake mix, 2 eggs and melted butter. Pour into pan.
- Mix cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture in pan.
- Bake for 30 minutes at 350 degrees.
- Sprinkle with powdered sugar.
Best served warm and also delicious with vanilla ice cream!
When it comes to making recipes gluten free, it’s not that difficult. It takes a bit of trial and error, but the end result is perfect. This gluten free recipe is easy to make and so delicious. My son even likes the gluten free version better than one full of gluten! However, this recipe is really easy to still make with regular cake mix, too.
