Life has been so heavy lately. Moves, losses, cold weather in May, and auto correct that makes me want to cry! I feel the need to remember the simple things. Just sit back and relax and see all of the good (the dandy if you will). There’s never just one bit of good, there’s always more than I can even fathom. So if you’re having a day that just feels too heavy to handle right now, keep reading because I’m going to share a few happy things and then a totally recipe (the kind where you don’t have to measure or mix anything)!!!
The world is green! Isn’t it marvelous?! It’s nice enough for a bike ride. It’s nice enough to play at the park with my babies. It’s nice enough to wear sandals and not look like a “absolute lunatic” (Anyone catch that Disney reference?). So I went on a bike ride and played at the park. It was windy and my hair was blown in every direction, and no one cared. It was glorious.
Murder, She Wrote is on Netflix! Did you know?! Have you been watching? I remember my mom watching them when I was little, and now during nap time I can’t wait to watch how Jessica figures out the crime, that was not so evident to through the episode (Law&Order makes it too easy sometimes). Seriously, this show is so clean and quirky. Take a minute and watch an episode… Not to mention in just about every episode I’ve watched so far there has been a now-famous-actor who was just getting started. Too fun!
Cows. They’re out. I know they’re out all year long but there was a particular group that were oh so friendly and came right up to the fence. I can’t decided if it was my voice or our black mini van that drew them close. That’s a hysterical story for another post. Do you see the one in the back?! Trying so hard to see what everyone else is getting to enjoy?
BLATs. I suppose you could call them BLTAs, but BLAT is just a bit more fun to say haha. A Bacon, Lettuce, Tomato and Avocado sandwich. Seriously they are so yummy! I had a turkey one at Red Robin a few weeks ago and I haven’t been able to shake the craving since. RECIPE: I toast my bread (it’s way better on a croissant), put down a spread of real mayo, turkey, crispy pan fried bacon (I’ve tried oven baked bacon and it just doesn’t have the right crispiness), tomato, avocado, and lettuce. It’s so good I always want seconds but I never have enough room. It’s so tasty and enjoyable. If you don’t have the turkey or if you don’t like avocado, just have a BLT!
Life always throws us curve balls, it’s just the way it is. But to make it through I’m forced to find the good around me and enjoy something. We’re given so much, it’s a shame not to get lost in the sheer awesomeness of spring. Hang in there, you’re going to make it!
