Original St. Louis Gooey Butter Cake Made Easy

St. Louis has a rich history that also consists of an ooey gooey cake recipe! It’s actually really easy to make the original St. Louis gooey butter cake by simply using yellow cake mix. The first time you make this dessert using a boxed cake mix, you’ll never go back to made from scratch again!

History of Gooey Butter Cake

Gooey butter cake has become a popular dessert around the country, but over the years it’s only St. Louisans who know the origin. This tasty cake was actually a happy accident that was discovered by a German-American baker right here in St. Louis sometime during the 1930’s.

Gooey Butter Cake Recipe Made Using Yellow Cake Mix

Ingredients:

  • 1 box yellow cake mix
  • 1 stick unsalted butter (melted)
  • 4 eggs
  • 8 oz package cream cheese (softened)
  • 1 tablespoon vanilla
  • 4 cups powdered sugar (3 1/2 cups for the recipe. Set aside the other 1/2 cup to sprinkle on top.)

Directions:

Preheat oven to 350 degrees.

​Using a hand mixer or stand mixer, combine cake mix, 2 eggs and melted butter. 

Grease a 9×13 inch pan with cooking spray and then press cake mixture dough into pan. (This will make the bottom layer crust.)

In large bowl, mix cream cheese, 2 eggs, powdered sugar and vanilla. 

Pour cream cheese mixture over dough that’s pressed into the bottom of the pan.

Bake for 30-35 minutes at 350 degrees or until top layer of cake is golden brown.

Sprinkle with powdered sugar.
