Growing up whenever we went to my grandparent’s house, my grandmother would always make an absolutely delicious cake. My grandmother’s pineapple coconut cake with cream of tartar icing is now a family favorite! I loved when she made that cake for us, but time has went by and my grandmother is no longer able to bake. She loved that cake, too. So I recreated it for her 86th birthday. Get the recipe below!

Pineapple Coconut Cake With Cream Of Tartar Icing

This cake is so easy to make and will become a fast family favorite. A real time and money saver, too. The secret is limited ingredients needed to make the icing! I’m pretty sure that’s why my grandmother started out making the cake. She never had to worry about not having the ingredients. Then she liked it so much and just continued making it.

 

Making Pineapple Coconut Cake

What you’ll need: 

This type of icing is pretty uniform across the board so I found a list of cream of tartar ones to use HERE.

Heat sugar, cream of tartar and pinch of salt over medium heat in a saucepan until melted.

Whip egg whites and vanilla extract in a medium size mixing bowl until soft peaks form.

Add hot mixture to mixing bowl and then whip for approximately 8 minutes.

What you’ll do:

  • Mix cream of tartar icing and layer in cake.
  • Drain crushed pineapple and sprinkle on top of icing layer.
  • Ice the entire cake.
  • Sprinkle coconut over top and sides of cake.
  • Top with cherries as a decoration.

This cake is perfect for any time of year and can be dressed up or down. Since it’s two layers it’s also perfect for feeding a larger crowd. So delicious and I know that your family will love it as much as mine does. It’s my grandmother’s favorite cake!
