Winter weather has finally happened here in St. Louis. I was beginning to wonder if the cold would ever arrive. Places like Texas received quite a bit of snow and we were just coming out of 60 degree weather! No longer. The cold is now here. One thing that has always been comforting for me this time of year are my mother’s slow cooker recipes. Many of the meals make me think of warmth and the love that went into them. Slow cooker meals just say winter! These days I don’t have a lot of time and my husband isn’t a fan of leaving a slow cooker going all day. I’m not sure how my mom did it! The kid’s schedules are keeping me busy and and on the go. I’m rarely home with much time to spare before dinner time. With my busy life… I decided to take one of my favorite recipes (that my mom would make in a slow cooker) and make it in an Instant Pot. Much faster. Plus, I wanted to make it gluten free, since I have celiac disease, so I did just that! This gluten free Instant Pot round steak recipe cooks up in under 30 minutes and pairs so nicely with rice. A definite win for a quick and easy winter dinner. Also perfect for holiday entertaining because it’s always a fan favorite meal!

When I first decided that I wanted to recreate my mom’s slower cooker recipe into Instant Pot form… I envisioned it being soooo easy. Not going to lie to you, friends. The electric pressure cooker has been in my house for a few months now and until today it hadn’t left the box. I was just too scared to use it! But I thought how hard would it be to make this recipe for you all??? That’s what I thought. Until the digital screen started to display “burn” at me! So I learned (from some electric pressure cooker loving friends) that I needed to use more liquid. I started over and it worked wonderfully. So there is a learning curve for gals like me. Now that I have a hang of it I’m able to create my mom’s recipe in half the time. Enjoy!
Steps For Making Instant Pot Round Steak

Step 1: Using the sauté function, brown the meat in the electric pressure cooker.
Step 2: Add stewed tomatoes, onions and water.
Step 3: Cook on meat/stew function for 25 minutes.
Step 4: Serve over rice.

- 2 pounds round steak
- 1/4 cup gluten free flour
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1 large can stewed tomatoes
- 1 medium yellow onion
- 2 cups rice (optional)
Ingredients

- 1. Cut up meat in pieces and coat both sides with flour, salt and pepper.
- Sauté meat in Instant Pot with oil until all pieces are browned on both side.
- Pour can of stewed tomatoes and chopped onions over top of meat.
- Add 2 cups of water to Instant Pot and stir.
- Secure lid on Instant Pot and cook at Meat/Stew setting for 25 minutes.
- When finished be sure to follow the Instant Pot instructions for how to release pressure value, etc.
- Serve over white rice.
*Be sure to follow your Instant Pot or electric pressure cooker instructions to make sure that you are using the equipment properly. This is a recipe only so I'm not qualified for teaching anyone how to actually use the Instant Pot.
